Wild Venison Loin Fillet

A beautifully tender, premium cut of wild venison, sourced through Highland Game from deer roaming the Scottish Highlands and estates. The loin fillet is exceptionally lean and is best cooked quickly: sear it in a hot pan with butter, garlic and thyme, leave it pink in the centre, then slice and serve with roasted roots, creamy mash and a red wine or blackberry sauce.
