Flash-fry them in a very hot pan for around a minute on each side, then slice into warm flatbreads with fried onions, mushrooms, peppery leaves and mustard mayonnaise. They are also brilliant for a speedy venison stroganoff or steak sandwich—just take care not to overcook this naturally lean meat.
