Wild Venison Shoulder Mince

Deeply flavoured and wonderfully versatile, this minced wild venison shoulder is sourced through Highland Game from deer roaming the Scottish Highlands and estates. Use it anywhere you might ordinarily use beef mince: slowly cook it with tomatoes, red wine, garlic and herbs for a rich venison ragù, or turn it into meatballs, chilli, cottage pie or homemade burgers. As venison is naturally lean, a little oil or finely diced bacon works beautifully when cooking.
