Wild Vension Haunch Steaks

Lean, tender and full of character, these haunch steaks come from wild venison sourced through Highland Game from the Scottish Highlands and estates. Bring them to room temperature, season generously and sear in a very hot pan for just a few minutes on each side, keeping the centre pink before allowing them to rest. Try them with crispy roast potatoes, greens and a creamy peppercorn, juniper or redcurrant sauce.
