A proper taste of the West Highlands, MacLennan’s Isle of Skye Black Pudding is handmade in small batches in Harlosh, near Dunvegan, using a traditional family recipe. Known as marag dhubh—Gaelic for black pudding—it has a peppery, savoury flavour with fewer sweet spices than many other varieties. Made with oatmeal, fresh onions, pork fat and beef suet, it has a satisfyingly firm texture that holds together beautifully when cooked. Slice and fry or grill until crisp at the edges, then serve as part of a full Scottish breakfast, with scallops, crumbled through salads or alongside chicken and roasted vegetables.
